1 can (15 oz.) black beans, rinsed and drain
2/3 cup dry bread crumbs
1 small tomato, seeded and finely chopped
1 jalapeno pepper, seeded and finely chopped
1 tsp. minced fresh cilantro (optional)
1 garlic clove, minced
1 Tbsp. olive oil
Mash beans in a large bowl with a fork or place in a food processor to blend. In the bowl add the bread crumbs, tomato, jalapeno, egg, cilantro, and garlic. Mix until combined. Shape into four patties.
Heat oil in a large skillet, cook patties over medium heat for 4-6 minutes on each side or until lightly browned. Serve on buns and/or top with sour cream, salsa, guacamole, or whatever your heart desires!
